The Moulin du pavillon is one of the institutions of the milling Paulic . Based in St Gérand (56 ), it is specialized in the production of buckwheat flour. Buckwheat is gluten-free plant from the same family as sorrel or rhubarb ( and therefore not a cereal ). The Moulin du pavillon has two brands of flour with authentic flavors : La Harpe Noire ( black wheat flour Britain conventional and organic ) and Saracen ( flour import buckwheat ) .
